Here’s a simple recipe for “Puntarelle alla Romana”:

Ingredients:

– Puntarelle (about 1 lb)

– 1-2 cloves of garlic, minced

– 2-3 salt-packed anchovies, rinsed and minced

– Extra virgin olive oil (3-4 tablespoons)

– Red wine vinegar (1-2 tablespoons)

– Salt and pepper to taste

Instructions:

1. Clean the puntarelle by removing the outer leaves and tough stems. Separate the inner shoots and cut them into thin strips.

2. In a bowl, soak the puntarelle strips in cold water with ice cubes for about 30 minutes to enhance their crispness.

3. Drain and pat the puntarelle dry with a clean kitchen towel.

4. In a separate bowl, prepare a dressing by mixing minced garlic, anchovies, olive oil, and red wine vinegar.

5. Toss the puntarelle strips with the dressing, making sure they are well-coated.

6. Season with salt and pepper to taste.

7. Allow the flavors to meld for a few minutes before serving.
